All our honey is cold filtered to remove wax etc without removing the important pollen content.

Our honey is collected from our hives from apiaries based around Milton Keynes. We collect the honey throughout the year therefore there is a range of flavours based on the seasons and the forage the bees find. The forage also has an effect on the texture or thickness of the honey with early season, in our area, tending to be thicker and faster setting than later summer honey.

The runny honey in our set is late season summer honey. Usual forage at this time is wild flowers, blackberry bushes, lime trees and Himalayan Balsam.

The naturally-set honey is usually early season spring honey. Usual forage at this time is wild flowers, hawthorn, blackthorn, and fruit trees.  As with all honey, this sets naturally over time. We have left this to happen with the honey forming large crystals with a grainy texture.

The soft-set honey, again, is usually early season spring honey. Usual forage at this time is wild flowers, hawthorn, blackthorn, and fruit trees.  However for this honey we have followed a process where a small amount of very fine grained honey is added to the honey while runny. This ‘seeding’ process causes the honey to form a very smooth, set  texture.

We use our naturally-set honey for our infused range as we found it holds the infused ingredients in suspension rather than settling out and so gives a superior uniform flavour.

We purchase our ginger and turmeric raw from local markets and peel, cook and crystallise it ourselves so we ensure the quality of the product. After finely chopping, we carefully add the perfect amount to the honey so that the natural taste and sweetness of the honey is not lost but the infused flavours and warmth come through.
